Modica Chocolate
Modica Chocolate is created using the same traditionally artisan methods as in the past; technically it can be described as “cold-processed” chocolate and is grainy and crumbly. Almost the entire process is carried out by hand, using techniques passed down from 1700, when the first chocolateries started to appear. We still add no fat or emulsifying agents and our cocoa paste is spared the typical conching processes that most of today’s classic chocolate is subjected to.
This is why you can still see the sugar grains and why it maintains its rough aspect and genuine flavour.
